Plum Cafe chef gives cooking demonstrations in Roswell

Monica Bolsoni has an eclectic culinary heritage. Born in Brazil with Italian grandparents, both countries have influenced her cooking.

She and her husband Brian O’Neill opened Plum Café a year ago, quickly attracting a following for Bolsoni’s fresh salads, paninis, soups and sandwiches. Soon the café will also be serving dinner, complete with an entirely new menu.

“Overall, the cuisine of Plum Café, especially dinner, is a reflection of my upbringing in Brazil, where Mediterranean, African, and Latin flavors mingled together,” Bolsoni said.

She attended the Art Institute of Atlanta’s culinary school and has been in the restaurant industry 13 years, including a stint as kitchen manager at Fires of Brazil. At one time she owned a catering business, and in those days she sometimes gave cooking demonstrations at events like bridal showers.

Now Bolsoni has decided to incorporate that element into Plum. Holding cooking classes and demos at the café is “something I always had in mind,” she said.

“Regulars here have asked me how to make some of the dressings and dishes. And some of my girlfriends and their husbands ask me for a little help on how to make a romantic dinner or how to put together food for a family gathering.” The café will be offering dinner service next month, and the dishes on the menu will reflect what she is teaching in the cooking demonstrations.

Each class is themed differently and requires specific ingredients and technique levels, so class costs vary depending on that theme.

“For example, we will be offering one titled How to Grill Like A Guy, which will highlight grilling techniques, special recipes and tips on how to cook the perfect protein, all while maintaining the practice of utilizing local, organic ingredients that are humanely raised,” she said.

A maximum of 15 people can be accommodated and advance registration is necessary. The classes will be held at the café once every two weeks on a Wednesday or Thursday at 5 p.m. Some topics planned are how to host a dinner, creating an aphrodisiacal menu for two, healthier foods for kids and gluten-free cooking.
